CHICKEN CURRY



Chicken Curry (2 pers.)


This curry is creamy and taste just like a delicious curry should – but there are no carbs what so ever or cream! I made it today with the few ingredients left in my kitchen and I simply must share this beautiful dish with you guys. The beans are good for you, as they contain a lot of iron, vitamin B and protein.



You need:


1 can. Lima or other white beans
1          Onion
2 dl     Low fat milk
200 g  Chicken filet
¼         Cauliflower
200 g  Peas (frozen are fine!)
1 tbsp.            Curry
1 tbsp.            Masala blend



What to do:


Chop up the onion in chunks and fry them until they are light brown and soft.  Blend them with the beans and the milk.
Chop up the chicken in bites and cook it with the spices on medium heat until half finished, then ad the blended veggies and stir. Turn down the heat and let it simmer in order to bring out the flavour.
Grate the cauliflower, so it looks like rice and put in in a pot. Ad the peas and pour boiling water on top.  Let it simmer in 1 minute and separate from water and use as rice for the dish, which is now finished!
