MEXI-LASAGNE



Mexi-Lasagne (6 pers.)


This is a lovely, low carb lasagne with a hint of Mexican spices! It is without the pasta, but still in layers. Very nice and easy if you have company – or just REALY hungry! It is suitable for the freezer as well.



You need:


500g   minced beef
2 cans of diced tomatoes
1 can of corn
4 Carrots
1 can of white beans
½ cup of milk
4 Zucchinis
200g Cheese, graved
250g Bacon
1 tbsp. Dijon 
2 Onions
3 Chillies
3 Garlics
1 tbsp. Paprika spice (or any other Mexican spice you like)



What to do:


Chop the onion, chilli and garlic and fry them on medium heat. When they are soft ad the meat. When the meat is getting grey, ad in the carrots grated, the tomatoes and the drained corn. Ad spices and turn down to low when sizzling.
In a blender you pour the drained beans along with milk and Dijon. Blend it in to a mass, just as lean as béchamel.
Cut the zucchinis lengthwise and use as lasagne plates. Put a layer of zucchinis in the bottom of a dish, then the meat and then the sauce. Continue layering but remember the meat-layer is the last one. On top of all you spread the cheese and at last the bacon. Bake the lasagne in the oven at 200 degrees for about 25 min.

PANANG GAI


Panang gai (4 pers.)


A classic dish from Thailand! Is very rich in taste and you can ad as much chili in, as you like it. This recipe is medium hot - well if you buy a Thai curry paste in the medium scale that is. If you cannot find all the ingredients, no worries! It tastes good with all sorts of stuff! Just make sure you have the main ingredients: fat reduced coconut milk, chili, curry paste (best result: panang curry paste) and kaffir lime leaves. 



You need:


Curry

3 tbsp.  Thai curry paste
300g     Chicken 
1 can of coconut milk - fat reduced
1 tbsp.   Fish sauce
1 tbsp.   Honey
1           Chili
6           Kaffir lime leaves

'Rice'
1          Cauliflower 


What to do:


Grave the cauliflower into a bowl and pour boiling water on, until covered.
Fry the curry paste in a wok, in order for the spices to come forward while stirring. Ad the chicken in chumps and cook until half done (ca. 3 minutes). Pour the coconut milk into the wok along with the fish sauce, chili in small bits, honey and half of the leaves in small bits as well. Cook until the chicken is done at a medium low temperature. 
Serve the dish with the rest of the lime leaves on top along with the cauliflower-rice.

CHICKEN CURRY



Chicken Curry (2 pers.)


This curry is creamy and taste just like a delicious curry should – but there are no carbs what so ever or cream! I made it today with the few ingredients left in my kitchen and I simply must share this beautiful dish with you guys. The beans are good for you, as they contain a lot of iron, vitamin B and protein.



You need:


1 can. Lima or other white beans
1          Onion
2 dl     Low fat milk
200 g  Chicken filet
¼         Cauliflower
200 g  Peas (frozen are fine!)
1 tbsp.            Curry
1 tbsp.            Masala blend



What to do:


Chop up the onion in chunks and fry them until they are light brown and soft.  Blend them with the beans and the milk.
Chop up the chicken in bites and cook it with the spices on medium heat until half finished, then ad the blended veggies and stir. Turn down the heat and let it simmer in order to bring out the flavour.
Grate the cauliflower, so it looks like rice and put in in a pot. Ad the peas and pour boiling water on top.  Let it simmer in 1 minute and separate from water and use as rice for the dish, which is now finished!

SUMMER COLESLAW



Summer coleslaw (4 pers.)


This salad is very fresh and sends the mind toward summer. It is bitter and sweet in the same time. The coleslaw is made without a white dressing, but it looks and tastes like coleslaw as you now it.



You need:


Salad:

¼        Lettuce
¼        White cabbage
200 g  Strawberries
2          Carrots
200 g  Feta cheese

Dressing:

1 tbsp. Olive oil
1 tbsp. Red wine vinegar
1 tsp.   Dijon
Juice of 1 lemon



What to do:


Cut all veggies and the strawberries into thin slices. Crumble the feta into and turn. Pour the dressing over and serve!

SMALL COOKIES





Small 'cookies' (10 pieces)



These small snacks are great to leave in the fridge for those small middle-day-energizers! 
They are quick and easy to make and eat and taste super sweet. These cookies does contain a bit of carbs as they contain oats. Like it extra sweet? Put in some honey.



You need:


1          Egg
1          Banana
25 g    Almonds
Approx. 25 g Oats
(1 tsp. Honey)



What to do:


Blend the banana with the egg and almonds into a smooth mass. Pour into a bowl and mix with the oats until the dough is less fluent, but still very wet. Spread the dough in small blobs in sizes of one tbsp. and bake in the oven for 15 minutes on 200 degrease. Enjoy!

APPLE CAKE





Apple Cake (2 pers.)

The fastest cake to make!!
This cake is light and has no carbs or sugar. You do not even have to ad honey, due to the sweetness of the apples. Serve with non-fat yoghurt.



You need:


25 g    Almonds
25 g    Sultans
1          Egg
1          Apple
1 tsp.   Cinnamon
(2 tsp. Honey)



What to do:


Blend all ingredients to a rough mass. Pour it in to a small springform pan. Bake in the oven for about 25 minutes at 200 degrease. Let it set for just 5 minutes and serve!
