SIMPLE OMELET



Simple Omelet (1 pers.)


This dish is great if you are in a hurry or just not in the mood for something big and advanced. I usually make this dish for lunch, as it can be brought along during the day without getting boring. An extra plus: it's cheap and healthy! 


You need:

2          eggs
1/2       broccoli 
2 tsp     herbs (eg. italien)
1 tbs     rapeseed oil for frying 
1 tbs     sunfloerseeds


Method:

Warm up the oil i a small pan at medium heat. Put in the broccoli in bits and roast for about two minutes. spread the herbs and pour the two eggs on top (this way the yolk stays soft, if you do not want that, simply stir the eggs before applying). Put the pan in the oven at 200 degrees for about 5 minutes. 
put on a plate and sprinkle the seeds. 
For an extra good dish put chunks of goat cheese on top!
